Chicken with chestnuts in Japanese style

Type this recipe here, later i might want to try.

Ingredients:
120g chicken meat,
150g chestnut (dried kind)
20g ginger
20g spring onion

Seasoning:
2 tbsp cooking wine,
2 tbsp dark soy sauce
1/4 tsp sugar
salt to taste

Thickening:
1 tbsp cornflour + 1 tbsp water

Method
1. Rinse chicken, debone and cut into pieces. Mix it well with dark soy sauce, then put a side for 30 mins

2. Soak the dried chestnuts in hot water for 30 mins. After then use a toothpick to remove the brown skin in the centre.

3. Heat pan with oil. Stir-fry chicken pieces until golden brown. Then remove from wok.

4. Heat pan with oil over high heat. Saute ginger and spring onion until fragrant. Add in chicken pieces and seasoning.

5. Pour in some water to cover the chicken, when boiled, lower the fire then let the chicken stew until medium cooked. Add in chestnut and continue to stew.

6. When chestnut are softened, turn the fire to high and simmer the stew until sauce is reduced. Add in thickening to the sauce then remove from fire.

7. Ready to serve.
