Green Tea Sorbet

Green Tea Sorbet

A wide variety of green tea flavors are available -- mandarin orange,apple and spice and echinacea blends in honey and lemon or mint flavors,as well as decaffeinated versions -- all of which can be used for the following sorbet recipe:

2 cups boiling water
2 cups water
8 (100 percent) green tea bags
2 Tablespoons lemon juice
1 1/4 cups sugar
1/4 cup dark corn syrup


Method

1. In a teapot, pour boiling water over the tea bags.

2. Cover teapot, and brew for 5 minutes. Remove the tea bags ,and gently squeeze the
remaining flavor out of them.

3. In a medium-sized sauce pan, bring the 2 cups of water and sugar to a boil. Boil for 1 minute.

4. Remove pan from heat, and stir in the tea, corn syrup and lemon juice. Pour into a metal bowl.

5. Cover, and refrigerate until well chilled -- approximately 1 hour.

4. Process in an ice cream maker and follow manufacturer's instructions.
