Hawker's Radish Cake

Ingredients:
300g rice flour
75g tapioca flour
1000ml water *
1 1/2 tsp salt

Method:

1. Mix all the ingredients in a mixing bowl and strain into a pot.

2. Stir and cook at medium heat until thickened.

3. Pour into a greased 8" round steaming tray and steam with high heat for about 45 mins or until cooked.

4. Remove and leave to cool completely before cutting into 2 portions.


*normally pple use tap water, you may use warm water(cooked water, leave a side to be cool down). If use warm water, it will faster ur way of cooking it.


Frying of Radish Cake

Ingredient:
4 tbsp oil
2 tbsp chopped garlic
1 portion of radish cake, cut into cubes
2 tbsp chopped preserved radish, cleaned and drained
3 eggs, add 2 tsp fish sauce and beaten
some chopped spring onioni for garnishing

Method:
1. Heat up 2 tbsp oil, put in radish cake and pan-fry until fragrant. Dish up.

2. Heat up 2 tbsp oil, saute chopped garlic and chopped preserved radish until aromatic.

3. Add in radish cake and stir well.

4. Pour in beaten eggs and cook until half set, stir well.

5. Sprinkle chopped spring onion on top and serve


Remarks: you must be wondering why this dish is called radish cake yet no radish is used in the ingredients. Actually it is the dried chopped radish used during frying tat give it the name.
