For all "fans" of glutinous rice, here is a Hokkien recipe. For those who do not eat pork, chicken or turkey may be substituted.
Fragrant Glutinous Rice
Ingredients (serves 3-4)
500 gms/1 lb glutinous rice
300 gms/12 ozs pork (chicken or turkey can be substituted)
3 red finger chillies
100gms/4 ozs dried shrimps
10 dried Chinese mushrooms
bunch coriander leaves with stalks
4 stalks spring onions
1 tbsp minced garlic,
100 gms/4 ozs dry roasted peanuts, chopped
6 shallots, peeled, thinly sliced and fried in oil until crisp (retain oil)
few drops sesame oil
Seasoning ingredients - mix together
1 tbsp light soy sauce
1 tbsp oyster sauce
1 tbsp dark soy sauce
1 tbsp shaoxing wine - optional
1 tsp salt
1 tsp white pepper
Procedure
Rinse glutinous rice and soak in water for 6 hours, then drain. Set aside to dry.
Cut meat and chillies into shreds (if using chicken or turkey, into cubes). Soak dried shrimps and mushrooms separately in warm water (shrimps for 10 mins, mushrooms for 1 hour) until soft, then cut into pieces (shrimp)/slices (mushroom). Cut coriander into sections and chop spring onions into rings.
Heat up 3 tbsp of oil used for frying shallots and add minced garlic. Once garlic turns colour (don't let it burn!) add minced shrimps. Stir fry for a few seconds, then add shredded meat and mushrooms. Once these are cooked and aromatic, add the drained rice and fry well.
Stir in the seasoning ingredients and mix well. Turn out mixture onto a steaming plate. Pour water into a wok or double steamer and place the plate in to steam for about 40 minutes.
Remove the rice mixture and mix in chopped peanuts. Sprinkle a few drops of sesame oil, fried shallots, coriander, spring onion and chilli shreds on top before serving.
