Ikan Masak Lemak Nenas

Ikan Masak Lemak Nenas

Ingredients:

½ ripe pineapple
10 stalks chilli padi (Thai chillies)
2 cups thick coconut milk

Pounded ingredients:

1 big onion, to be sliced
2 cloves garlic, to be sliced
2 cm fresh turmeric

1 stalk lemongrass, to be slightly crushed
2 tbsp sugar
fresh fish (talapia) or dried fish (ikan sepat/ikan kurau - according to one's preference)

Note: If using dried fish, soak it in water for about 15 minutes, drain and clean it.

Method:

1. Cut and slice pineapple according to one's liking. Place the pineapple slices in a pot. (If using fried fish, add it in the pot as well.)

2. Add in the pounded ingredients, lemongrass and sugar. Cook over medium heat and keep stirring. Let it simmer for about 10 minutes.

3. Add in coconut milk and season to taste. Lastly, add in the fresh fish.
