Beancurd is known as tofu nowdays, it is cheap and nutritious. It is very popular in chinese societies, there are many recipes for beancurd. 'Pi-Pa Shaped Beancurd' is a Guangdong dish. This beancurd is mead into the shape of a Pi-Pa (a kind of chinese musical instrument). The dried shrimp, scallop, or crab meat may be added as stuffing. It can be deep-fried and served with brown peppercorn salt or ketchup.
Pi-Pa Shaped Beancurd
Ingredient
6 cubes of beancurd (2" x 2")
2 dried scallops
2 tbsp chopped ham
2 tbsp chopped green onion
2 tbsp chopped water chestnuts (abt 5 pcs)
Seasoning-1
1 egg
1/4 tsp salt
Seasoning-2
1 tbsp oil
2/3 cup stock
1 tbsp oyster sauce
1/4 tsp salt
1 tsp cornstarch
Method
1. Mash the beancurd and place in a bowl. Add ham, green onion, water chestnuts, egg and salt. Mix well.
2. Add 2/3 cup of water to dried scallop, steam for 1/2 hour. Tear into shreds.
3. Brush oil on spoon (12 spoons). Place some scallop on spoon. Fill each spoon with beancurd mixture. Steam for 15 mins.
4. Boil the seasoning-2. Pour over the beancurds. Serve.
Note:
You may deep fry the beancurd after steaming it.
