Ingredient
3 tbsp sesame seeds
4 tbsp sugar
2 eggs
2/3 cup flour
2 tbsp milk
2 cup cold water
1/2 cup cornstarch
6 cups oil
Method
1. Heat a pan to very hot. Add sesame seeds; fry for 1 mins over low heat. Don't stop stirring. Remove it after cooling, crush it finely. Mix with sugar in a bowl.
2. Beat the eggs in a large bowl. Then add cold water and milk. Sift flour in; combine them to smooth paste consistency.
3. Pour the no.2 flour batter into a pan. Stir fry it over low until it boils and becomes thickened. Turn off the heat.
4. Remove the thickened flour batter (custard like) into a square mould (rub some oil on the mould first). Let cool and remove to the refrigerator for at least 2 hours.
5. Remove the chilled custard from the refrigerator and cut into small diamond shaped pieces. Coat with cornstarch.
6. Deep fry with smoking hot oil for about 1 min until golden and crispy. Remove and drain; put on a plate.
7. Sprinkle the sesame seed sugar (no. 1) on them. Serve.
Note: you maybe use a double boiler to boil the flour paste.
