Fried Chicken Slices with Lemon Sauce by fu pei mei

Ingredient
400g chicken breast
4 cups oil for deep frying

Marinate (chicken)
1 egg yolk
1/3 tsp salt
1/2 tbsp wine
1/2 tbsp light soya sauce
1 tbsp cornstarch
1 tbsp water
1/2 tsp pepper

Coating (chicken)
6 tbsp cornstarch
2 tbsp flour

Seasoning sauce
4 tbsp fresh lemon juice
3 tbsp soup stock or water
1/4 tsp salt
2 tsp cornstarch
1/2 tsp sesame oil

Method
1. After removing chicken skin, slice into 3cm - 5cm. Marinate for about 10 mins

2. Mix seasoning sauce in a small bowl

3. Coat the chicken with mixed powder. Deep fry it at 160 degrees oil over low heat for about 1/2 mins until golden. Drain and reheat the oil to very hot.

4. Deep fry the chicken again for 10 more secs. Drain and remove to a platter.

5. Heat another 1 tbsp of oil to stir fry the seasoning sauce, when it become boiled and thickened, splash 1 tbsp of hot oil to make the sauce shinning.

6. Pour the sauce over the fried chicken slices. Serve hot.

Note: Garnish the platter with some sliced lemon and parsley. If you like more sour taste, squeeze some lemon juice over the chicken slices at last.
