Diced Fish with fermented black beans by fu pei mei

Ingredient
400g white meat fish fillet
1 1/2 tbsp fermented black beans (chopped)
1 tbsp chopped garlic
1 tbsp chopped ginger
1 tbsp chopped red pepper
2 tbsp chopped green onion
2 cups oil

Marinate (fish)
1/3 tsp salt
2 tsp wine
1/4 tsp white pepper

Seasoning
3 tbsp soup stock
1 tsp wine
1/3 tsp salt
1/2 tsp sesame oil
1/4 tsp black pepper
1 tsp cornstarch

Method
1. Cut the fish meat into large slices about 1.5 cm thick first, then score the top side lengthwise and cross-wise each 1/8 inch deep.

2. Then cut into 2.5 cm square prices. Put in a bowl and marinate for about 30 mins

3. Heat oil in a pan. Fry all of the fish over high heat for abt 10 seconds. Remove the fish and drain off the oil.

4. Heat the pan again. Add 2 tbsp of oil to stir dry the fermented black beans, garlic and ginger.

5. After 10 seconds, add the seasoning sauce and fish.

6. Continue stirring gently. Sprinkle the green onion, red pepper and 1 more tbsp of heated oil on top.

7. Transfer to a serving plate.

Note: if you dun like to eat red hot pepper, dun add it.
