'Ma-La Cake' is a Guangdong style tea-time dessert. Originally it is callled 'Coin Ma-La Gao', because there are a lot of little holes on the surface of the steamed cake, and the holes look like coins. The upper layer of the cake is fluffy and has bigger holes, and the bottom layer has smaller holes. Since it contains lot of oil, it should be served hot.
Ingredient
8 eggs
2 cup of sugar
2 cup of cake flour
1 1/2 cup of milk
1 tsp of baking soda (mix with 1 tbsp hot water)
1 tbsp of baking powder
1 tsp vanilla essence
1 cup of lard or shortening
1 piece of white paper
Method
1. Beat the eggs in a large bowl until very stiff (about 5 mins)
2. Add sugar, beat again for 10 mins, add milk, flour and baking powder to mix well.
3. Dissolve 1 tbsp baking soad in 1 tbsp water, add into no.2 mixture. Add lard (or shortening) and add vanilla essence, mix it thoroughly.
4. Place a white paper on a steamer (brush a little oil on the paper), then pour the no. 3 mixture into the steamer, cover it tightly, and steam for about 30 mins over high heat.
5. Remove cake from steamer, cut into small pieces and serve while it is warm.
